Cod Recipe by Nathan Oh

This recipe is for an olive oil and lemon fish. It is a great dish for dinner. This recipe can also be used for tilapia. I would describe it as a very light dish, although it can feed several. Enjoy! 

 

Serves 4-5

Ingredients:                                                                                    

2 cod filets

1 onion

3 lemon

Olive oil

Salt

Pepper

 

  1. Cut the onion into about ½ inch chunks, then cut 1 lemon into quarters set them aside in separate bowls.

 

  1. Start marinating the fish, rub olive oil into the filet for several minutes.

 

  1. Put the stove up to high heat, with the olive oil drizzled on the pan with, the onions, and 1 lemon’s worth of juice.

 

  1. When bottom is cooked, flip then continue cooking until it is cooked all the way through.

 

  1. Serve with olive oil and the remaining 2 lemons, cut in half.
